Perfume notes of sage and pepper mix with red fruit aromas when you first smell this wine. The wine needs a little decanting to fully open up and release some of its more savory notes. Rich raspberry and dried cherry combined with an oak aroma are noticeable. The flavors are a combinationof dark chocolate and earth and the finish is long and lingering. Tannins and acidity combine to make a rich, complex wine.
One of my favorite wines to blend is the HH Bozak Red. This wine is a Bordeaux style red blend using Cabernet Sauvignon as the base. The Cabernet grape has nice tannin and usually a good long finish. I blended in Malbec to add color and an earthy perfume aroma. Mourvedre adds acidity and a pepper component that compliments the earthy quality of the Cabernet. Petit Verdot added mouth feel to the wine and bumped up the intensity. This wine was in 35% new French Oak barrels for 22 months and is a wine made to age.

The 2012 vintage was one the largest crop in Washington State and of extraordinarily high quality. A mild winter and cooler spring paged the way for recovery fromt he lighter 2010 and 2011 seasons. Warmer days and cool nights throughtout the September and October ripening months created exceptional color development resulting in well-balanced acidity and structure. Harvest ran early October through the 3rd week of October.
