This wine has been cellared in our warehouse for a few years to help the acid mellow and tannins balance with the fruit. Aromas of black pepper, oak, dried cherries, currents, leather, smoke and earth reveal themselves as the wine fills the glass. Because of the cooler vintage this Cabernet is more medium bodied and elegant. The subtle nuances of the wine reveal themselves over time and the finish is nice and complex. A good example of old world style mixed with new world flavors. This wine will air nicely with a good steak, keep it simple.

2011 was a cooler growing vintage for Washington State. Coyote Canyon Vineyard in the Horse Heaven Hills AVA was about 350 units below its average growing degree days. The cooler growing season gave the grapes plenty of hang time and a hot spike in September helped to ripen flavors that were lagging behind. The wines were a little more subtle and refined overall but still had great tannins and high acid levels. While these wines aren't as big and showy as some hotter vintages they poses the right attributes to age gracefully.
