2010 Big John Cab Reserve

Tasting Notes

Named after "Big John", he was the John J. Ascuagas' Golden Nugget sale topper bull in 1974.
A dark ruby color signifies this bold and complex reserve Cabernet Sauvignon with aromas of ripe black currants and blackberries while the palate reveals layers of dark chocolate, cassis, leather and toasted vanilla that keep lingering. A great wine with grilled red meats or a rich dark chocolate dessert.

Winemaker's Notes

The grapes were handpicked at perfect ripeness and full of flavor then sorted and crushed.  Fermentation took place in small 1 ton bins and the wines were fermented to dryness. The wine was aged for 15 months in small French Oak Barrels.
